Nigella seeds, Qizha in Arabic and sometimes referred to as black cumin, are indigenous to the Middle East and have appeared in its cuisine for millennia. In fact, there are few ingredients that have remained so constant, and so highly esteemed over such a long period. Whilst the nigella seed is grown across the Middle East and parts of India, many consider the Palestinian cities of Nablus and Jenin to be the producers of the highest quality nigella seeds in the world. It is these seeds that our expert chef Kamel Hashalmon sources. He soaks and washes the raw seeds in a salt water solution, and then spreads them out to be naturally sun-dried, and then slow roasted. Only after this lengthy process is completed, will he start the grinding process. Between enormous basalt millstones from the Golan Heights, Kamel slowly and painstakingly overseas as the seeds gradually change their form to become an obsidian colored paste; deep, rich, dark. The first component of the Black Tahini with Nigella Seeds is completed.
Next the Palestinian nigella seeds meet the Ethiopian sesame seeds from the world renowned Humera region.
