Our local farmers follow fair trade practices and refrain from using any chemical or artificial substances. As such, you can confidently purchase, consume, and serve our unique halvah products safe in the knowledge that our products are healthy, organic, and socially conscious.  The harvested seed are shipped to Nablus and Jerusalem where they retain their whole form as the grinding process begins. By retaining the shells, the health benefits of the halvah are increased as the nutritionally rich husks are ground along with the rest of the seed. As Kamel’s massive basalt millstones grind the seeds, they slowly turn to rich, thick paste of a beautiful light coffee color. This paste is slowly and carefully added to natural sugars, and a touch of soapwort to solidify the product and enable the characteristic halvah bar to be formed.  The sugar is necessary to create the sensual sweetness of the halvah, but we ensure that it makes up no more than 5% of the end product.
